This Bee’s Knees cocktail is fresh, sweet and bright and is a perfect springtime cocktail. It’s also super easy to make, only needing three ingredients.
The Bee’s Knees cocktail dates back to American Prohibition Era. The Honey and Lemon Juice helped to sweeten the drink whilst also mask the taste of poorly made alcohol. It name perhaps comes from the expression of being excellent, or very well liked – potentially from doing such a good job of masking the poor alcohol flavour.

- 75 ml Honey
- 75 ml Hot Water
- 50 ml Gin (We Used Aviation American Gin)
- 25 ml Lemon Juice
- Garnish with a slice of Lemon
Bee’s Knees Cocktail Recipe
Only seven steps to make the perfect Bee’s Knees Cocktail!
- To start we are going to be making some Honey syrup. This is very similar to Sugar syrup but is made with Honey instead of Sugar. By turning the Honey into a syrup, it thins it out and makes a more pourable consistency which is easier to mix into cocktails.
- In a measuring jug, add the Honey and hot water. Then whisk thoroughly to combine.
- Set aside to cool to room temperature (the Honey syrup should make around 6 cocktails – you can store it in the fridge for later).
- Add to a cocktail shaker the Gin, 25ml of the Honey syrup, and the Lemon Juice.
- Then fill with ice and shake the shaker hard for around 2 – 3 minutes until the outside of the shaker turns cold
- Fill a glass with lots of ice and then strain the contents of the shaker into the glass.
- Garnish with a slice of Lemon.
