Alcohol
- 50 ml London Dry Gin (We used Bombay Sapphire English Estate Gin)
Juices, Sodas & Syrups
- 15 ml Lemon Juice
- 15 ml x Honey Syrup or Simple Sugar Syrup
- Soda Water to top up
Fruit & Other
- 1 x Fresh Fig cut into quarters
- 2 x Fresh Thyme Sprigs
Fig & Thyme Gin Fizz Cocktail Recipe
Only seven steps to make the perfect Fig & Thyme Gin Fizz!
- Place three quarters of your fresh fig, the leaves from one sprig of thyme, and your sugar syrup into the bottom of a cocktail shaker. Muddle firmly until the fig turns into a thick, jammy purée.
- Pour in your fresh lemon juice and the gin.
- Fill the shaker with ice and shake hard for 10 seconds to chill and combine.
- Double strain the mixture into a tall glass packed with fresh ice.
- Top up the drink with soda water.
- Slide the remaining fig quarter onto the rim and tuck in your other thyme sprig.
- Serve, sip and enjoy!

Do I have to peel the fig before muddling?
No, not at all! The skin of a ripe fig is soft, edible, and holds a lot of that deep pinkish-purple colour. Just wash it, slice off the tiny stem at the top, quarter it, and drop it into the shaker. When you strain the drink over ice, any bits will be caught in the strainer.
How do I make the thyme flavour stand out more without it tasting like soup?
Thyme is an aromatic herb, meaning most of its flavour comes from its smell rather than its juice. Strip just a few small leaves to muddle into the base drink, but rely on the garnish for the heavy lifting. Brushing or lightly smacking the garnish sprig against your wrist right before placing it on top of the ice bursts the oil glands, giving you a burst of herbal aroma every time you take a sip.
