This Peach & Passion Fruit Bellini is a twist on a classic Bellini. It makes a wonderful alternative to champagne or prosecco.

A Bellini is a cocktail made with Prosecco and peach purée. It was invented sometime between 1934 and 1948 by Giuseppe Cipriani, the founder of Harry’s Bar in Venice, Italy. He named the drink because its colour reminded him of the toga of a saint in a painting by 15th-century Venetian artist Giovanni Bellini.

Alternatives to the Bellini can be made by replacing the peach puree. A Puccini uses mandarin juice; a Rossini uses strawberry purée or a Tintoretto is made with pomegranate juice.

Also Marks & Spencer’s sell a bottled version of this cocktail, which is a blend of White Wine with Peach & Passion Fruit Juice.

Peach & Passion Fruit Bellini Ingredients

  • 4 shots (100ml) x Peach Puree
  • 4 shots (100ml) x Passion Fruit Juice
  • 1 shot (25ml) x Lemon Juice
  • 2 shots (50ml) x Peach Schnapps
  • 1 shot (25ml) x Passoa
  • Prosecco to top up
  • Half a Passion Fruit for garnish

Peach & Passion Fruit Bellini Cocktail Recipe

  1. Pour the Peach Purée, Passion Fruit Juice, Lemon Juice, Peach Schnapps & Passoa in to a jug with a few ice cubes.
  2. Give the jug contents a stir and then strain in to glasses, filling each glass about half full.
  3. Top up the glasses with Prosecco and garnish each glass with half of a Passion Fruit.
  4. Then Sip & Enjoy!
