This Barbados Surprise cocktail is a colourful rainbow of flavours. It’s a Caribbean twist on it’s Californian cousin the Tequila Sunrise and is a perfect blend of flavours to enjoy on a summers evening.
The layers are formed through technique and sugar content. Grenadine is the heaviest sugar syrup, so it sits at the bottom. Orange juice is slightly lighter, and the Rum/Curaçao mix is the lightest because alcohol is less dense than sugar water. This with the technique of using the bar spoon and plenty of ice allows the layers to perfectly form.

Barbados Surprise Cocktail Ingredients
Alcohol
- 2 shots (50ml) x Rum (We used Bacardi Carta Blanca)
- 1/2 shot (10ml) x Blue Curaçao
Juices, Sodas & Syrups
- 1/2 shot (10ml) x Grenadine
- 2 shots (50ml) x Orange Juice

Barbados Surprise Cocktail Recipe
You can make the perfect Barbados Surprise Cocktail in six steps!
- To start making the Barbados Surprise, get a tall or high ball glass and drizzle grenadine in to the base of your glass.
- Then fill the glass carefully with ice cubes to near the top (between 1/2 and 3/4 full).
- Then gently pour the orange juice down a bar spoon and the side of the glass on top of the grenadine.
- In another glass or a shaker stir together the rum and blue curaçao then gently pour this down the bar spoon to form the top layer on top of the orange juice.
- Garnish with an orange segment and a strawberry.
- Then Sip & Enjoy!

FAQs
Can I use spiced rum instead of white rum?
Absolutely. A lightly spiced rum will add warming vanilla-and-clove notes, making the colour a bit deeper and the flavour more autumnal.
How do I keep the layers distinct?
Pour each layer slowly over the back of a bar spoon and use chilled ingredients – this gives you sharp colour separation and a more striking “sunset” effect.
Also if your layers are mixing, your orange juice might be too “watery” so try a more premium “smooth” juice with higher natural sugar content.
